Tahini Yoghurt (serves 4 - 6 as a side)

Ingredients:

100g runny tahini

150g greek yoghurt

juice 1/2 lemon

1 garlic clove, grated

pinch salt + pepper

Add all ingredients to a bowl and start to mix together with a whisk, the mixture will start to get really thick. When this happens add about 50ml water to loosen it up, whisk again to combine, then add more water to get your desired consistency. You don’t want it so runny that it runs off a spoon, more the consistency of a thick yoghurt.

This goes well with veggie salads, roasted aubergine, squash and other sauces such as salsa verde. Enjoy!
