Cashew Creme
Ingredients:
150g cashews
juice 1/2 lemon
1 garlic clove, grated
pinch salt + pepper
Ideally soak your cashews for about 2 hours or you can leave in water the night before making too. Once soaked and soft, drain the cashews add to a Nutribullet style blender with the lemon juice, garlic and a pinch of salt and pepper then top with water until the cashews are just covered.
Whizz up the mixture and if the cashews get stuck you need to add more water so go gently if you do as it might not need much get it to a flowing sauce consistency. You want it to be smooth and thick, but able to whizz up well in the mixer. Taste early on incase you feel it needs more lemon, garlic or seasoning, as if you add lemon this will also count as water (liquid). Find a desired taste and serve!
This sauce goes great in soups, with jacket potatoes, as a butter alternative with bread or on salads. Get creative!
