Winter Chia Pudding (makes 1)

Ingredients:

2 tbsp chia seeds

150ml milk / nut milk

pinch cinnamon

1 tbsp almond butter

few brazils (or any nuts for topping)

1 tbsp hemp (or any nuts to sprinkle)

1/2 cup fresh or frozen berries

dash date / maple syrup if using frozen berries


Prepare the chia seed pudding the night before (or 2 hours before eating), you can use a large tumbler or a jar. Add the chia seeds, cinnamon and nut milk to the tumbler and stir - you may need to stir 3 - 4 times before the seeds start to come together and stop separating. Leave in the fridge to set, this takes 1.5 - 2hours but overnight is a great way to have your breakfast ready for the morning!

Finish layering the pudding - to use fresh frozen berries, add them to a small saucepan along with a dash of syrup and water, stir gently on a medium heat until they have warmed through and the liquid starts to bubble and thicken. If using fresh berries, simply dice ready to eat.

Build on top of the chia pudding your berries (cold and fresh, or hot from frozen), almond / nut butter, greek yoghurt and extra seeds to top.
