Spiced Winter Porridge (makes 2)
Ingredients:
1 cup porridge oats
1 cup milk of your choice
3/4 cup water
1/2 tsp cinnamon
1/2 tsp tumeric
1/2 ground ginger
date syrup or honey
almond butter or any nut butter
seed mix*
In a small saucepan, add oats, milk, water + spices and heat on medium until it reaches a thick consistency. Stir throughout, especially towards the end, so it doesn’t stick. Transfer to a bowl, add a spoon of nut butter, drizzle of date syrup or honey and some toasted seeds. We love pumpkin and sunflower for breakfast but you can also learn how to make a seed mix below!
Toppings!*
My go to toppings are the above, but you can be as playful as you like. Add easy fruits such as berries, sliced banana or tropical fruits. In the Winter I make stewed fruit. My go to seeds mix, is flaked almonds, pumpkin, sesame, flax and sunflower seeds. To make a seed mix - simply put 2 tbsp of each into a jar and shake. You may want to toast things like flaked almonds, pumpkin and sunflower seeds - you can do this by frying them in a dry pan (no oil) until they start to brown - you must keep them moving so stir or gently shake every few seconds. It won’t take long at all! Remove from the pan instantly when done or they will keep cooking and burn.
