Date Snickers (makes 30)

Ingredients:

200g dark chocolate (approx 70%)

30 medjool dates (pitted)

Approx 300g firm crunchy peanut butter

20g coconut oil

2tbsp maple syrup

20g desiccated coconut

30 half walnut pieces


Start by preparing the dates. Cut gently down the side of each date longways, so it stays in one piece but is open. Take a spoonful of the peanut butter and place it into the date - it doesn’t need to close they will be slightly open and we will cover in chocolate!

Chop up the chocolate into small pieces and place in a glass heatproof bowl with the coconut oil and maple syrup. Put about 3 inches of boiling water into a pan and simmer on a low heat, placing the heatproof bowl on top with no gaps round the edge. The steam from the water will slowly melt the mixture, so stir often until everything is melted, silky and incorporated. Once done, turn off the heat but keep the bowl on top of the steam so the chocolate stays runny.

Place the dates onto a wire rack with the peanut butter facing up, then place the wire rack over a baking tray or some kitchen towel so the excess chocolate is easy to clean off. Take a spoon and cover each date well in chocolate, then place the half walnut on top and sprinkle with coconut.

Place in the fridge until the chocolate has formed up again before eating.

Tip! If you have any leftover chocolate you can dip strawberries in or orange slices - both delicious.
